Heather - The pretty red color was something that I hadn't considered, but you're right, it does look jewel-toned!

CW - I'm using it in the same fashion, a tiny bit over some Greek yogurt - I'm sure I don't have to tell you what kind of willpower that involves. I gained weight during marathon training too! When you try this, be sure to heed my warning about adding the coconut mixture a bit later - I like the oats nice and toasted, but that was a little too much time in the oven for the coconut.

Meg - I have an aversion to vegetable oil - it's probably all in my head, but I hate the smell. Butter obviously makes everything more delicious, I added a bit here to counteract the vege. oil effect and to lend some salt too. Doing some quick internet research, I learned that butter is lower in fat by percentage than vegetable oil too! Glad you enjoy Ina's recipe too.

This granola recipe is wonderful and I have made it many times but in the cookbook it calls for oil not butter. I'm sure butter makes it even better though! I wonder if there is a healthier oil one could use, perhaps melted earth balance?

I have a granola obsession. I seriously make a huge batch, store it in the fridge, and eat it with yogurt and fruit every morning. It agree that too much can be a bad thing - the last time I was marathon training I ate as much as I wanted, and gained weight despite my crazy training (this could also be because I ate just about any and everything I wanted). This time I'm only allowing myself two small handfuls. I'm printing this out and will try it the next time around.
